FOOD

Viennese Goulash

Viennese Goulash

A classic case of culinary exchange; this originally Hungarian dish has evolved to have a unique character in Austria; the hearty, slow-cooked stew is filled with tender beef, onions and spices like sweet paprika and caraway; often served with buttered or egg noodles or bread dumplings.

Lake Constance Whitefish and Perch

Lake Constance Whitefish and Perch

Fresh freshwater fish from Lake Constance — whitefish) and perch are the two most popular kinds, usually fried in a thin batter or baked in butter with herbs; the fish is white, soft and springy, with no muddy smell and a delicate flavour that reflects the cleanliness of the lake.

Salzburger Nockerl

Salzburger Nockerl

This soufflé-like dessert is believed to have been invented in Salzburg in the 17th century as an ode to the surrounding peaks; egg whites and sugar are whisked into a meringue until soft peaks form; the meringue is then dusted with powdered sugar to represent the snow-covered hill.
